... excerpt from the overview article & table of contents ...In the mass market, where inflation and population growth are virtually the only ways to increase earnings, functional foods remain of keen interest to food corporations. This interest has led to acquisitions and alliances, in addition to a stream of new products developed in-house. The first generation of functional foods created by the multinationals met with both success and failure.

Campbell’s Intelligent Quisine and Kellogg’s Ensemble were among the early casualties. Minute Maid’s Tropicana Pure Premium calcium-enriched orange juice, Ross Products’ Health Source Soy Protein Shake, Nabisco's Knox Nutrajoint and numerous functional beverages and nutrient-enhanced bars (see p.5) are among the early winners. However, as one consultant noted, "It’s too early either to claim victory or write the epitaph for functional foods.

NBJ research indicates that functional foods sales reached $xx.x billion in 1998, growing x% from an adjusted figure of $xx.xbillion in 1997. Growth has primarily come from beverages and snack foods (mostly bars) with some contribution from dairy. NBJ forecasts growth of x-x% for the functional foods category, which is part of the broader $xx.x-billion 1998 U.S. nutraceuticals market. This market includes the four food categories defined and quantified on page 3, in addition to that year’s $xx.x billion in supplement sales.

Soy features strongly in new product development in response to the soy protein heart health claim approved by FDA last October. One of the first soy introductions in the cereal aisle of mainstream supermarkets was Kellogg’s
