A more relaxed approach to qualified health claims for food, new nutritional science and upward-revised intake recommendations—not to mention media coverage of the obesity epidemic and other national health headlines—paint a picture of growing health awareness and fertile ground for functional food in the United States.

According to Nutrition Business Journal, functional foods grew XX% to sales of $XX billion in 2002, generated by an expanding range of fortified convenience foods and improved ingredients—plus better taste—than when the market took off in the mid-90s. Functional foods grew faster than the sluggish dietary supplements segment, which rose only X% in 2002. Certain functional categories—notably energy drinks, functional water and the inexhaustible nutrition bar segment—far outpaced consolidated growth...
